Few things are better at the end of a long day than coming home to a dinner that’s already prepared.
This super simple White Chicken Chili cooks away all day while you’re at work. Just toss the beans in when you get home, decompress for 20 minutes, and omnomnom…..
(PS – All of my recipes are what I call ‘throw-together’. You won’t see much measuring. This makes them super easy!)
Slow Cooker White Chicken Chili
- 2 boneless, skinless chicken breasts
- 2 4oz cans diced green chilies
- 1 medium onion, chopped
- 2-3 cloves minced garlic
- 3-4 c chicken broth
- 2 cans white beans, drained and rinsed
- 1/2 lime
- chopped cilantro and sour cream (for garnish)
Place the chicken breasts in bottom of slow cooker
Top with chilies, onion, and garlic
Sprinkle with a little salt, pepper, and cumin and squeeze the lime over all
Pour chicken broth around the ingredients
Cook on high for four hours, or low for 8
When done, shred chicken with two forks and add back to slow cooker, along with the two cans of beans
Cook on low for about 20 minutes more
Garnish with chopped cilantro and sour cream
