Super Simple Taco Soup

Taco Soup.

Because every day should be Taco Tuesday. <3

This super yummy soup is one of our family favorites and it couldn’t be easier to make.

(PS – All of my recipes are what I call ‘throw-together’. You won’t see much measuring. This makes them super easy!)

Super Simple Taco Soup


Ingredients

  • one onion
  • one red bell pepper
  • one zucchini
  • 1 lb ground beef
  • 2 cans diced tomatoes with chilies
  • 1 can black beans
  • 1 packet taco seasoning
  • some frozen corn
  • 2 c chicken broth
  • garnish with avocado, cilantro, and sour cream

Instructions

  1. Dice up one onion, a red bell pepper, and one zucchini

  2. Cook diced veggies in a skillet with 1 lb of ground beef til beef is brown

  3. Place in a large pot with two cans of diced tomatoes with chilies (undrained), a can of black beans (drained and rinsed), a packet of taco seasoning, and some frozen corn

  4. Add about 2c of chicken broth to thin

  5. Simmer for 20 minutes

  6. Garnish with avocado, cilantro, and sour cream
