This super yummy soup is one of our family favorites and it couldn’t be easier to make.
(PS – All of my recipes are what I call ‘throw-together’. You won’t see much measuring. This makes them super easy!)
Dice up one onion, a red bell pepper, and one zucchini
Cook diced veggies in a skillet with 1 lb of ground beef til beef is brown
Place in a large pot with two cans of diced tomatoes with chilies (undrained), a can of black beans (drained and rinsed), a packet of taco seasoning, and some frozen corn
Add about 2c of chicken broth to thin
Simmer for 20 minutes
Garnish with avocado, cilantro, and sour cream
