I live in Texas now, but moved here from Seattle. These delicious Southwest Salmon tacos are a beautiful blend of both Northwest and Southwest cuisines, and have become a family favorite!

The addition of sweet peppers and onion takes their flavor profile over the top.

A dollop of sour cream and some fresh avocado are the perfect toppings.

Southwest Salmon Tacos

Ingredients

  • one large salmon filet
  • 3 T butter, divided
  • salt
  • pepper
  • garlic powder
  • one small onion, sliced
  • one yellow pepper, chopped
  • one red pepper, chopped
  • corn tortillas or butter lettuce leaves
  • sour cream
  • avocado

Instructions

  1. Melt 2T of the butter, and brush on the salmon filet 

  2. Sprinkle filet with some salt, pepper, and garlic powder

  3. Bake at 425 for 10-15 minutes, or until fish flakes easily with a fork

  4. Meanwhile, saute the onion and peppers in the other 1T of butter til tender

  5. Pile flaked salmon and sauteed veggies into tortillas or lettuce leaves

  6. Serve with the sour cream and fresh avocado
