This Southwest Corn Salad is a delicious summer side dish that goes with just about anything.

Looking for a super easy summer side dish that will go with just about anything?

Here ya go.

This delicious Southwest Corn Salad pairs fresh veggies with black beans and a delicious tangy dressing. The fresh corn really makes a difference here.

To make the salad, first get all of your veggies chopped up, and combine them in a bowl with the beans…

Next mix up the dressing….

Finally, pour the dressing onto the veggies, mix together, and refrigerate for at least one hour to blend the flavors.

That’s it!

This bright salad goes great with grilled chicken, steak, or fish.

It can also be warmed and stuffed into corn tortillas for a delicious veggie taco filling!

Southwest Corn Salad

Ingredients

Salad Ingredients

  • 2 15oz cans black beans
  • 2 c grilled or oven roasted corn, cut from the cob
  • 1 1/2 c cherry tomatoes, halved
  • 1/2 c red onion, chopped
  • 1/4 c cilantro, chopped

Dressing Ingredients

  • 1/2 c fresh lime juice
  • 3 T extra virgin olive oil
  • 1/2 t garlic powder
  • 1/4 t chili powder
  • 1 1/2 t sea salt
  • 1 t pepper

Instructions

  1. In a large bowl, mix together black beans, corn, cherry tomatoes, onion, and cilantro. Set aside. 

  2. In a small bowl, whisk together lime juice, evoo, garlic powder, chili powder, sea salt, and pepper. 

  3. Add to the large bowl and toss all of the ingredients together.

  4. Refrigerate for at least one hour to chill.
