This Smothered Pork Chop recipe proves that you don’t need a bunch of unhealthy flour to make a delicious gravy.

The gravy in this dish gets its rich flavor from the browned bits in the pan, and it’s SO damn good.

(PS – All of my recipes are what I call ‘throw-together’. You won’t see much measuring. This makes them super easy!)

Smothered Pork Chops

Ingredients

  • 4 boneless pork chops
  • 2-3 tbsp butter
  • 1 onion, sliced
  • 1 carton sliced mushrooms
  • 1/2 cup beef broth
  • few dashes Worcestershire sauce
  • garlic powder
  • salt
  • pepper
  • 1/2 bag baby spinach
  • 1/2 cup heavy cream

Instructions

  1. Sprinkle both sides of chops with salt and pepper and saute in butter over medium-high heat for 3-5 minutes per side, depending on thickness.

  2. Remove from pan and keep warm.

  3. Add sliced onion and sliced mushrooms to pan along with beef broth, a sprinkle of garlic powder, and a few dashes of Worcestershire.

  4. Season with salt and pepper, and cook until veggies are tender, scraping browned bits off the bottom of the pan as you go.

  5. Add in baby spinach and heavy cream. Stir until spinach is wilted.

  6. Add chops back to the pan and simmer, covered, for 4-5 more minutes, or until chops are cooked through.

  7. Serve veggies and gravy over chops.
