Pizza-Stuffed Zucchini Boats

These yummy zucchini boats have all the flavor of pizza, plus a hearty dose of nutrition.

And they won’t make you feel like a ginormous ball of fluff from all those carbs.

(PS – All of my recipes are what I call ‘throw-together’. You won’t see much measuring. This makes them super easy!)


Pizza-Stuffed Zucchini Boats


  • zucchini (1 per person)
  • 1/2 jar spaghetti sauce
  • shredded mozzarella
  • sliced pepperoni
  • parmesan cheese
  • Italian seasoning
  • garlic powder
  • olive oil


  1. Preheat oven to 350 degrees

  2. Cut zucchini (1 per person) in half lengthwise and scoop out the insides using a spoon. Leave about a 1/4 inch around the edges

  3. Brush insides of zucchini with olive oil and bake for 10 minutes

  4. Meanwhile, add scooped out zucchini and a half jar of spaghetti sauce to a skillet.

  5. Sprinkle with garlic powder and Italian seasoning and simmer for five minutes

  6. Add a good handful of shredded mozzarella and stir to melt cheese

  7. Spoon mixture into the zucchini shells and top with halved slices of pepperoni, more shredded mozzarella, and parmesan cheese

  8. Bake for 20-25 minutes
