My cookbook features three different versions of ‘Cauliflower Helper’. In this one we give it an Italian flavor with ricotta, mozzarella, spaghetti sauce, and fresh basil, to make a healthy lasagna dish.
Yes, I said ‘healthy lasagna dish’.
Oh hell yes.
(PS – All of my recipes are what I call ‘throw-together’. You won’t see much measuring. This makes them super easy!)
Lasagna Cauliflower Helper
- 1 lb ground beef
- medium chopped onion
- bag frozen cauliflower
- handful shredded mozzarella
- container ricotta cheese
- half jar low-sugar spaghetti sauce
- garlic powder
- Italian seasoning
- fresh basil for garnish
Brown a medium chopped onion and a pound of ground beef
While cooking, season with salt, pepper, garlic powder, and Italian seasoning
Meanwhile, steam a bag of frozen cauliflower until very tender. Mix cooked cauliflower into the ground beef mixture, breaking it into small pieces
Add a good handful of shredded mozzarella cheese, a container of ricotta cheese, and half a jar of low-sugar spaghetti sauce.
Heat and stir til cheese is melted and mixture is heated through
Sprinkle with sliced fresh basil
