Easy Lasagna Cauliflower Helper.

 My cookbook features three different versions of ‘Cauliflower Helper’. In this one we give it an Italian flavor with ricotta, mozzarella, spaghetti sauce, and fresh basil, to make a healthy lasagna dish.

Yes, I said ‘healthy lasagna dish’.

Oh hell yes.

(PS – All of my recipes are what I call ‘throw-together’. You won’t see much measuring. This makes them super easy!)


Lasagna Cauliflower Helper


  • 1 lb ground beef
  • medium chopped onion
  • bag frozen cauliflower
  • handful shredded mozzarella
  • container ricotta cheese
  • half jar low-sugar spaghetti sauce
  • garlic powder
  • Italian seasoning
  • salt
  • pepper
  • fresh basil for garnish


  1. Brown a medium chopped onion and a pound of ground beef 

  2. While cooking, season with salt, pepper, garlic powder, and Italian seasoning

  3. Meanwhile, steam a bag of frozen cauliflower until very tender. Mix cooked cauliflower into the ground beef mixture, breaking it into small pieces

  4. Add a good handful of shredded mozzarella cheese, a container of ricotta cheese, and half a jar of low-sugar spaghetti sauce. 

  5. Heat and stir til cheese is melted and mixture is heated through

  6. Sprinkle with sliced fresh basil
