Greek Gyro Bowl

I loooooove Greek gyros. LOVE. They’re actually my favorite food. But I do not love the way they make me feel afterwards because of all that bread.

Ick.

In my homage to the mighty gyro we ditch the bread and  replace it with super yummy, super healthy quinoa. Plus it’s much easier! And you know what? I’ve grown to love this version even more than the original. Which is a freakin’ LOT.

(PS – All of my recipes are what I call ‘throw-together’. You won’t see much measuring. This makes them super easy!)

Greek Gyro Bowls

Ingredients

  • 1 lb ground beef
  • 1 c quinoa
  • chicken broth
  • 2 cloved minced garlic
  • oregano
  • dried rosemary
  • salt
  • pepper
  • grape tomatoes
  • sliced cucumber
  • sliced red onion
  • crumbled feta
  • tzatziki sauce

Instructions

  1. Cook quinoa according to package directions, but sub chicken broth for the water

  2. Brown a pound of ground beef with two cloves of minced garlic. Season with oregano, rosemary, salt, and pepper while cooking

  3. Spoon cooked quinoa into bowls and top with the meat, some grape tomatoes, sliced cucumbers, and sliced red onion

  4. Sprinkle with crumbled feta and add a dollop of tzatziki sauce on top (I typically use store bought to save time. You can find premade tzatziki sauce either in your store’s dairy section or near the deli items)

  5. OPTIONAL: If you’d prefer to make your own tzatziki, just mix 16oz plain Greek yogurt with some grated cucumber, 2 cloves minced garlic, juice of half a lemon, a couple tablespoons olive oil, and some fresh dill.
