Super-Simple Stir Fry

I love stir fry, but hate making it the traditional way because of all the chopping. Ew.

In this super easy stir fry we use two shortcuts to make it much faster to prepare: packaged broccoli coleslaw, and deli roast beef.

Don’t be weirded out by that! It really works here. Promise.

(PS – All of my recipes are what I call ‘throw-together’. You won’t see much measuring. This makes them super easy!)

Super Simple Stir-Fry

Ingredients

  • 1/2 lb nitrite-free deli roast beef
  • 1 package broccoli coleslaw
  • 1 packet no MSG stir-fry seasoning
  • carton sliced mushrooms
  • can sliced water chestnuts
  • 3-4 Roma tomatoes
  • green onion
  • olive oil
  • sesame seeds
  • prepared brown rice
  • optional add-ins: bean sprouts, cashews

Instructions

  1. Prepare a no MSG stir-fry seasoning packet according to directions

  2. Stir-fry a package of broccoli coleslaw and some sliced mushrooms in olive oil until crisp-tender.

  3. Slice 1/2 lb nitrite-free deli roast beef into strips, and add to the skillet along with one drained can of water chestnuts, 3-4 Roma tomatoes cut into wedges, a handful of sliced green onions, and the prepared sauce.

  4. Heat through.

  5. Garnish with sesame seeds and additional green onions. Serve over brown rice.
